Gluten Free Muffins

Ingredients

    Wet ingredients:
  • - 400 ml coconut milk
  • - 120 ml olive/ vegetable oil
  • - 1 TBSP apple cider vinegar
  • - 1 tsp vanilla extract
    Dry ingredients;
  • - 220 gm Karma Waters gluten free baking mix.
  • - 1/3 tsp salt
  • - 140 gm brown sugar
  • - 3 tsp baking soda powder
  • - 2 cups coconut flakes
  • - 4 TBSP dried raisins

Instructions

  1. Mix all dry ingredients well together set aside.
  2. Mix all wet ingredients well together then pour this mixture into the dry ingredients stiring well.
  3. Lightly grease muffin cups & pour the mix into cups.
  4. Bake at 200-220 degrees C in oven for 25-30 minutes.
