Crispy Eggplant with Salad Dressing Spicy Soysauce

Crispy Eggplant with Salad Dressing Spicy Soysauce

A great vegan appetizer which is easy to make and delicious.

Ingredients

  • Eggplant x 2
  • Lettuce x 1 head
  • Rice flour x 300g
  • Black pepper
    Optional Sauces:
  • Spicy soysauce (3TBSP soysauce with mashed garlic & chili and ½ TBSP olive oil)
  • Salad dressing
  • Ketchup

Instructions

    Preparation Eggplant:
  1. Slice eggplants thin - as shown below
  2. Soak eggplants in salt water for 5 minutes
  3. Add 5 TBSP rice flour and 1/5 tsp turmeric powder into a bowl
  4. Strain excess water from eggplants
  5. Cover eggplants in mixed powder as shown above
    Preparation Lettuce:
  1. Wash and pick lettuce
  2. Soak lettuce in salt water for 3 minutes
  3. Strain and place on plate as shown in pictures
    Cooking:
  1. Add 3 TBSP of cooking oil into frying pan
  2. Heat up oil
  3. Place eggplant slowly and fry until crispy and brown
  4. By the end of everything you will have a plate of eggplant chips that looks something in the pictures.

Notes

Serving Suggestions:

- Lettuce dipped in spicy soysauce

- Crispy eggplant dipped into salad dressing

- Combine those two and eat together to get perfect taste.
