Eggplant salted in Lemon & Ginger Sauce

Eggplant salted in Lemon & Ginger Sauce

Ingredients

  • Eggplant x 2 pcs
  • Lemongrass x 1 bunch
  • Chili x 1
  • Dark soysauce x 3 TBSP
  • Vegan stock x 1 tsp
  • Black pepper x ½ tsp
  • Water x ½ cup

Instructions

    Preparation:
    Eggplant
  1. Slice eggplant in half, cut into quarters. Soak eggplant in salt water for 5 minutes
    Lemongrass/chili/ginger sauce
  1. Slice lemongrass in half - mince bottom half and keep top half
  2. Slice chill into quarters
  3. Mince ginger fine.
    Cooking:
  1. Add 2 table spoon of cooking oil into frying pan. Stir-fry eggplants for 5 minutes, or until golden. Remove eggplant and keep in a strainer.
  2. In the same pan, place minced ginger and lemongrass to frying pan - stir for 30 seconds then add chill & lemongrass stalks and while stiring add 3 dark soysauce and all spices. Finally add 1/2 cup of water and cook for 2 minutes until all ingredients are well absorbed.
  3. After sauce is mixed together, turn the gas off then add cooked eggplant and mix them well together until it's all combined.
