Tofu and Mushroom with Red Rice

Tofu and Mushroom with Red Rice


  • 5 pieces (sticks) soybean curds
  • 10 pieces straw mushroom
  • 5 pieces shitake mushroom
  • 5 pieces wood ear mushroom
  • 2 TBSP vegetable cooking oil
  • 5 gloves garlic
  • ½ thumb ginger
  • ½ handful corianders
  • 1 tsp curry powder
  • 2/3 tsp salt
  • 2 tsp vegetable stock / mushroom seasoning powder
  • ½ tsp black pepper


  1. Soak soybean curds in hot water for 20 minutes, drain them cut them into small pieces (2cm x 2cm)
  2. Cut mushroom into small pieces (2cm x 2cm)
  3. Mash garlic and ginger until fine
  4. Heat the wok with vegetable oil. Stir-fry mashed garlic and ginger then add curry powder. Add soybean curds, mushrooms and stir well until it turns into golden brown color. Add salt and vegetable stock then keep stirring for 5 minutes until all the ingredients are well absorbed.
  5. Off the heat, place the cooked dish onto a plate and decorate with corianders ontop. Sprinkle black pepper for fragrance favor.
