Vegetable Burgers

Vegetable Burgers

Ingredients

  • Corn on the cob x 4
  • Purple yams x 3 (Perfect yam paddies that are 100 organic, gluten free and delicious as can be)

Instructions

  1. Place yams into a boiling pot of water until they are soft enough to mash
  2. Grate corn into all, chunks
  3. Place softened yams into large mixing bowl.
  4. Add grated corn, mix well until it all combined. As you mix, add:
  5. Rice flour x 5 TBSP
  6. Salt x 1 1/2 tsp
  7. Black pepper x 1 tsp
  8. Vegan stock x 2 tsp
  9. Basil or coriander x 1 handful
  10. You should get your mix to something that looks like in the pictures. The key is getting the paddies right. Check out this handy trick to make sure every paddy comes out perfect. Borrow the lid from that Nutella jar and add a little cooking oil to the inside to ensure you paddies look good every time.
    Cooking:
  1. Add cooking oil in frying pan
  2. Fry for 5 minutes until both sides are golden and crispy

Serving Suggestions:

These vegetable burgers can be served with vegan BBQ and salads. We ended up dipping ours in ketchup and eating them with our hands. Enjoy.
