Yam, Pea Sprouts, Tofu & Mushroom Patties

Serving Size: 4 People - each person gets 3 patties

Yam, Pea Sprouts, Tofu & Mushroom Patties


  • Fresh Purple Yams (300g)
  • 450g Firm Tofu
  • 1 handful of Pea Sprouts
  • 1 handful of Wood Ear Mushrooms
  • 1 tsp Salt
  • 1 tsp Vegetable Stock Powder
  • 1 tsp Cinnamon powder
  • 1/3 tsp Black Pepper – coarse ground is best


    Preparation & Baking Method:
  1. Wash the Wood Ear Mushrooms - leave in water to soak.
  2. Peel the Yams.
  3. Boil the Yams until they are soft / easily squeezed with your fingers - drain well and set aside.
  4. Use a mincer to grind the Wood Ear Mushrooms until they become like a thick coarse paste - set aside.
  5. Roughly chop the Pea Sprouts - set aside.
  6. In a big pot or bowl mash the Yam & Tofu until well combined then add the Mushroom & Pea Sprouts into the mixture. Then add Salt, Vegetable Stock Powder, Cinnamon and Black Pepper.
  7. Keep mashing & mixing the mixture until it can be formed into balls.
  8. Divide the mixture into 12 balls. Pat the balls to be patties, set on a tray ready to bake.
  9. Bake at 250 degree C for 40 minutes.


- Thinly spread BBQ sauce on the top of the patties.

- Serve with salad & sesame dressing.
